Couscous with pine nuts & crasins

Ingredients

  • 1 box whole wheat garlic and herb olive oil couscous
  • 2 stalks celery
  • 1/3 cup crasins
  • 1/3 cup fresh parsley
  • 1/3 cup pine nuts, toasted
  • 2 green onions
  • 2 tsp lemon juice
  • Salt and pepper

Directions

  1. Cook couscous by box directions, set aside to cool

  2. Chop all other ingredients

  3. Mix together all ingredients, lastly the lemon juice and salt and pepper

  4. Serve at room temperature
