Field Salad with Pluots and Pluot Viniagrette

Ingredients

  • 6 sliced Flavor Safari plants
  • 6 cups fresh spinach or mixed baby greens
  • 3/4 lb. shredded cooked chicken breast
  • 1 cup sliced celery
  • 1/2 red onion, thinly sliced
  • 1 cup sliced cucumber or fennel
  • 2 Flavor Safari pluots, pits removed
  • 1/4 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 1/4 honey
  • 1 tsp. Dijon mustard

Directions

  1. Slice 6 pluots into wedges and combine with greens, chicken, celery, cucumber and onion in salad bowl. For dressing, combine remaining 2 pluots, olive oil, vinegar, honey,
  2. and Dijon mustard in blender, until smooth. Toss with salad and serve.
