Almost Fat Free Cheesecake

This is a pretty good recipe considering that it’s got only 3 grams of fat and 180 calories per serving! My mom and I made this last week for a family get together and everyone thought it was great!

Ingredients
- 1/4 cup GF cookie crumbs or dry bread crumbs sweetened with 1Tbsp sugar
- Two 8-ounce packages fat-free cream cheese
- One 10-ounce can fat-free sweetened condensed skimmed milk (we couldn’t find fat free, used low fat instead)
- 4 egg whites
- 1 egg
- 1/3 cup lemon juice
- 1 teaspoon vanilla
- 1/4 cup GF flour mix - 2 parts rice flour, 2/3 parts potato starch, 1/3 part tapioca flour (you could use 1/4 cup regular flour instead, I’m sure)
- Assorted fruit for topping if desired (we used fresh strawberries mixed with s/f strawberry fruit spread)

Preheat oven to 300 degrees. Spray an 8″ springform pan with cooking spray and sprinkle the crumbs on the bottom of the prepared pan.

In the bowl of your mixer, beat the cream cheese until fluffy. Gradually beat in the sweetened condensed milk. Add the egg whites and the egg, beating until well incorporated. Add the lemon juice and vanilla and sprinkle the flour mix into the bowl. Beat on low until well blended. Pour into the crumb-lined pan and bake for 45-50 minutes or until the center is set.

Cool and chill to serve with fruit topping. Makes 10-12 servings

Note: When making cheesecakes, remember that springform pans can leak, so it’s wise to wrap the bottom in foil before placing in oven.
