Savoury Zucchini and Carrot Slice

East to put together and nice to eat hot, or take on a picnic and eat cold

Cook time: 40 minutes
Serves 6 people

Ingredients

  • 2 zucchini, grated
  • 2 carrots, grated
  • 1 medium leek, sliced
  • 4 rashers bacon, diced
  • 5 eggs, lightly beaten
  • 1/4 C oil (rice bran, vegetable oil of choice)
  • 1 C self raising flour
  • 2 t Dijon mustard
  • 1 C grated cheese

Directions

  1. Saute leek and bacon in a little extra oil, until soft.

  2. Mix together eggs, flour, mustard, cooled leek mix and remaining ingredients.

  3. Place in well greased, medium sized baking dish.

  4. Bake at 180oC approximately 35-40 minutes, until firm to touch and top is golden.

  5. Stand 10 minutes before serving with salad of your choice.

  6. Also nice served with plain yoghurt and chilli sauce.
