Chickpea Fritters Supreme

Very delicious luncheon dish.
Serve with sour cream and chilli sauce on the side

Ingredients
- 1 x 400 gr can chickpeas, drained and smashed
- 1 x 400 gr can whole corn kernels, drained
- 2 x medium zucchini, grated
- 2 x spring onions, sliced
- 2 eggs, beaten
- 1/2 C milk
- 3/4 C self raising flour
- little oil for frying
Directions

Mix all ingredients together until blended.

Cook spoonful lots, on both sides, in a little oil in heated frying pan until golden and crispy.

Serve while hot with a spoonful each of sour cream and chilli sauce on the side.
