Blackberry ice Cream

Ingredients

  • 2 cups fresh blackberries
  • 1 cup granulated sugar
  • 2 cups heavy cream
  • Seeds from 1 vanilla bean OR 1 Tbsp. vanilla extract
  • 2 to 3 Tbsp. fresh lemon juice

Directions

  1. Puree berries in a food processor. Force berries through a fine strainer to remove seeds. Add sugar to cream and mix until dissolved. Stir in berry puree, vanilla and lemon juice.
  2. Freeze in an ice cream machine according to manufacturer’s directions.
  3. makes about 1 quart

  4. Note: To remove seeds from vanilla bean, split bean in half lengthwise and scrape out seeds using a sharp knife.
