Blackberry Ice Cream

Ingredients

  • 4 cups fresh blackberries (see note)
  • 1 cup water
  • sugar
  • 2 1/2 cups whipping cream
  • blackberries for garnish

Directions

  1. Line a strainer with two layers of dampened cheesecloth. Set over large bowl. In a medium saucepan, combine blackberries and water. Slowly bring to a boil. Reduce heat and simmer gently until soft, about 10 minutes. Pour into cheesecloth-lined strainer. Let stand until juice has drained into the bowl, about 30 minutes. Gently squeeze pulp to extract remaining juices.
  2. Measure blackberry juice into heavy medium saucepan. Add 1 cup of sugar for each up of juice. Cook over low heat, swirling occasionally until the sugar dissolves. Freeze in container several hours to mellow flavors. Garnish with fresh berries.

  4. Note: Unsweetened frozen blackberries, thawed, may be substituted.
