Blueberry Sorbet

Ingredients

  • 2/3 cup sugar
  • 1/2 cup water
  • grated zest of 1 lemon
  • 1 cinnamon stick
  • 1 1/2 cups fresh or thawed frozen blueberries
  • 1 Tbsp. lemon juice
  • 1 Tbsp. cherry-flavored brandy (optional)
  • 1 egg white

Directions

  1. In a small, heavy saucepan, stir together the sugar, water, lemon zest and cinnamon stick. Bring to a boil over medium heat, stirring until the sugar dissolves. Reduce the heat and simmer for 5 minutes. Remove from the heat and let the syrup cool, then remove the cinnamon stick.
  2. Puree the blueberries in a processor. Add the syrup, lemon juice, cherry brandy and egg white. Pulse the machine until thoroughly blended.
  3. Pour the mixture into an ice cream maker and churn following manufacturer’s directions, about 15 minutes.
  4. makes 1 quart
