Marinated Vegetables

Ingredients

  • 1/4 cup white wine vinegar
  • 2 Tbsp. vegetable oil
  • 1 tsp. sugar
  • 1/2 tsp. salt
  • 1/2 tsp. chopped fresh dill
  • 1/4 tsp. pepper
  • 1 large cucumber, thinly sliced
  • 2 large ripe tomatoes, sliced
  • Garnish: fresh dill sprigs

Directions

  1. Combine first 6 ingredients.
  2. Arrange cucumber, onion, and tomato on a platter; drizzle with vinegar mixture. Cover and chill at least 30 minutes before serving. Garnish, if desired.
