Greek Tomatoes

Ingredients

  • 4 medium-size tomatoes, cut into 1/4 inch thick slices
  • 1/4 cup capers, drained and rinsed
  • 4 oz. crumbled feta cheese
  • 1/4 cup minced fresh parsley
  • Coarsely ground pepper
  • 2 Tbsp. olive oil

Directions

  1. Place tomato on a platter. Sprinkle with capers and next 5 ingredients; drizzle with oil.
