Shrimp Tomato Pasta

Ingredients

  • 1 lb. unpeeled, medium-size fresh shrimp
  • 3 tomatoes, peeled and chopped
  • 6 to 8 fresh mushrooms, sliced
  • 1/4 cup sliced ripe olives
  • 1/4 cup dry white wine
  • 1 Tbsp. dried Italian seasoning
  • 1 Tbsp. olive oil
  • 1/4 tsp. salt
  • 1/4 tsp. lemon pepper
  • 1/4 tsp. ground black pepper
  • 1/8 tsp. ground red pepper
  • 3/4 tsp. capers
  • 10 oz. lemon pepper fettuccine, cooked
  • 2 Tbsp. grated Parmesan cheese

Directions

  1. Peel shrimp, devein, if desired.
  2. Bring shrimp and next 12 ingredients to a boil in a skillet. Reduce heat; simmer, stirring occasionally, 5 minutes or just until shrimp turn pink and sauce is slightly thickened. Serve over pasta; top with cheese.
