Greek Garbanzo Stew

Ingredients
- 1 medium onion, diced
- 1 Tbsp. olive oil
- 2 garlic cloves, minced
- 1 (28 oz.) can diced tomatoes
- 1 (15 oz.) can garbanzo beans, rinsed and drained
- 1 (14.5 oz.) can vegetable broth
- 2 Tbsp. tomato paste
- 1/2 tsp. dried rosemary
- 2 tsp. dried oregano
- 1 tsp. Greek seasoning
- 1/4 tsp. salt
- 1/2 tsp. pepper
- 1 (6 oz.) pkg. fresh baby spinach
- Crumbled feta cheese (optional)

Dutch oven over medium-high , if desired.4 to 5 minutes or until tender. Add garlic, and cook 1 minute. Stir in tomatoes and next 8 ingredients. Bring to a boil; reduce heat to low, and simmer, stirring occasionally, 15 minutes. Stir in spinach and chopped parsley; cook 5 minutes. Top with crumbled feta cheese
