Coconut Ice Cream

Ingredients

  • 2 cups milk
  • 4 egg yolks
  • 1/4 tsp. salt
  • 2 cups whipping cream
  • 1 Tbsp. vanilla extract
  • 1 (15 oz.) can cream of coconut
  • 1 cup frozen coconut, thawed

Directions

  1. Whisk together first 3 ingredients in a heavy saucepan; cook over medium heat, whisking constantly, 25 to 30 minutes or until thickened. Remove from heat; stir in whipping cream and remaining ingredients. Cool slightly. Place plastic wrap directly on surface; chill.
  2. Pour mixture into freezer container of a 1- gallon electric freezer, and freeze according to manufacturer’s instructions.
  3. Pack freezer with additional ice and rock salt and let stand 1 hour before serving.
  4. makes 1 1/2 quarts
