Ingredients
- 2 cups milk
- 4 egg yolks
- 1/4 tsp. salt
- 2 cups whipping cream
- 1 Tbsp. vanilla extract
- 1 (15 oz.) can cream of coconut
- 1 cup frozen coconut, thawed
Directions
- Whisk together first 3 ingredients in a heavy saucepan; cook over medium heat, whisking constantly, 25 to 30 minutes or until thickened. Remove from heat; stir in whipping cream and remaining ingredients. Cool slightly. Place plastic wrap directly on surface; chill.
- Pour mixture into freezer container of a 1- gallon electric freezer, and freeze according to manufacturer’s instructions.
- Pack freezer with additional ice and rock salt and let stand 1 hour before serving.
