Rhoda’s Manelbrot

Ingredients

  • 3 large eggs
  • 3/4 cup sugar
  • 1/2 cup vegetable oil
  • 1 tsp. vanilla extract
  • 3 cups all-purpose flour
  • 1 Tbsp. baking powder
  • 1/2 tsp. salt
  • 2 tsp. grated lemon rind
  • 1/2 cup sliced almonds

Directions

  1. Beat eggs at high speed with an electric mixer until foamy; gradually add sugar, beating well. Add oil and vanilla, beating until well blended.
  2. Combine flour and next 3 ingredients; stir into egg mixture until smooth. Stir in almonds
  3. Divide dough in half; shape each portion into a 10 × 2-inch log on a lightly greased baking sheet
  4. Bake at 350 degrees for 50 minutes.
  5. Cut each log crosswise into 3/4 inch-thick slices on baking sheets.
  6. Bake at 275 degrees for 20 minutes. Remove to wire racks to cool.
