Grilled Chicken Breasts with Fig-and-Melon Compote

Ingredients
- 1 cup milk
- 1/3 cup honey
- 8 skinned and boned chicken breast halves
- 1 cantaloupe, peeled, seeded, and finely chopped
- 1 honeydew melon, peeled seeded and finely chopped
- 1 papaya, finely chopped
- 3/4 cup fig preserves
- 1 Tbsp. chopped fresh mint
- 1 Tbsp. lime juice
- 1/2 tsp. salt
- 1/2 tsp. pepper
- Garnish: fresh mint sprig
Directions
- Combine milk and honey in a shallow dish or large heavy-duty zip-top plastic bag; add chicken. Cover or seal and chill 8 hours, turning occasionally.
- Stir together cantaloupe and next 5 ingredients, cover and chill 2 hours
- Remove chicken from marinade, discarding marinade. Sprinkle with salt and pepper.
- Grill, covered with grill lid, over medium-high heat (400 to 450 degrees) 6 minutes on each side or until done.
- Top chicken with fruit mixture. Garnish, if desired.
