Mexican Chocolate Cake

- Cake:
- 1 1/4 c. flour
- 1 c. sugar
- 1/4 c. cornstarch
- 3 tbsp. cocoa
- 1 tsp. soda
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 1/3 c. oil
- 1 tbsp. vinegar
- 1 tsp. vanilla
- 1 c. cold water
- Glaze:
- 2 tbsp. cocoa
- 1 tbsp. oil
- 1 tbsp. corn syrup
- 2 tbsp. + 1 tsp. water
- 1/2 tsp. cinnamon
- 1 c. powdered sugar

Cake:

In a 8 inch Dutch Oven mix dry ingredients with a fork. Add remaining ingredients. Mix with fork until thoroughly blended. Bake for 30-35 minutes (350 degrees). Cool in Dutch Oven, pour on glaze then let set.

Glaze:

In small saucepan combine all ingredients, except sugar. Stir over low heat until smooth. Gradually beat in sugar until smooth and shiny.
