Roasted Garlic- Basil Pesto

Ingredients

  • 1 garlic bulb
  • 1 tsp. olive oil
  • 2 cups fresh basil leaves
  • 2 garlic cloves
  • 1/4 cup freshly grated pecorino or Parmesan cheese
  • 1/4 cup pine nuts
  • 1/4 cup butter or margarine, softened
  • 2 Tbsp. olive oil
  • 1 Tbsp. lemon juice

Directions

  1. Cut off pointed end of garlic bulb, and spread apart whole cloves, leaving tight outer covering intact. Place garlic on a piece of aluminum foil; drizzle with 1 tsp. oil. Fold foil to seal.
  2. Bake garlic at 425 degrees for 30 minutes;
  3. cool.

  4. Squeeze pulp from roasted garlic cloves into food processor bowl. Add basil and remaining ingredients. Process until smooth, stopping to scrape down sides.
  5. makes 3/4 cup.
