Corn Muffins

Ingredients

  • 1 cup all-purpose flour
  • 1 cup yellow cornmeal
  • 1 (11 oz.) can sweet whole kernel corn, drained
  • 2 Tbsp. minced red bell pepper
  • 1 Tbsp. baking powder
  • 1 tsp. salt
  • 1/4 tsp. ground red pepper
  • 3/4 tsp. 1% low-fat milk
  • 1/2 cup egg substitute
  • 2 egg whites
  • 2 Tbsp. vegetable oil
  • Vegetable cooking spray

Directions

  1. Combiner first 7 ingredients in a large bowl; make a well in center of mixture.
  2. Stir together milk and next 3 ingredients. Add to flour mixture, stirring just until moistened. Spoon into muffin pans coated with cooking spray, filling two-thirds full.
  3. Bake at 375 degrees for 20 minutes. Remove muffins from pans immediately, and cool slightly on wire racks.
  4. makes 1 dozen
