Mozzarella-Pepper Bagel sandwiches

Ingredients
- 2 Tbsp. olive oil
- 2 Tbsp. red wine vinegar
- 1 to 2 garlic cloves, pressed
- 1 tsp. dried basil
- 1/4 tsp. freshly ground pepper
- 4 bagels, split
- 8 (1 oz.) mozzarella cheese slices
- 1/2 (12 oz.) jar roasted sweet red peppers, drained
- 4 small onion slices
- 4 tomato slices
Directions
- Combine first 5 ingredients in a jar; cover tightly, and shake vigorously. Drizzle over cut sides of bagels; top bagel bottoms with half of cheese.
- Cut peppers into strips; place evenly on bagel bottoms with onion, tomato, and remaining cheese. Replace bagel tops, and seal in plastic wrap. Chill 2 to 4 hours before serving.
