Mozzarella-Pepper Bagel sandwiches

Ingredients

  • 2 Tbsp. olive oil
  • 2 Tbsp. red wine vinegar
  • 1 to 2 garlic cloves, pressed
  • 1 tsp. dried basil
  • 1/4 tsp. freshly ground pepper
  • 4 bagels, split
  • 8 (1 oz.) mozzarella cheese slices
  • 1/2 (12 oz.) jar roasted sweet red peppers, drained
  • 4 small onion slices
  • 4 tomato slices

Directions

  1. Combine first 5 ingredients in a jar; cover tightly, and shake vigorously. Drizzle over cut sides of bagels; top bagel bottoms with half of cheese.
  2. Cut peppers into strips; place evenly on bagel bottoms with onion, tomato, and remaining cheese. Replace bagel tops, and seal in plastic wrap. Chill 2 to 4 hours before serving.
