Blackened Salmon with Mango Salsa

Ingredients
- 2 (6 oz.) Salmon fillets
- All Natural Pam cooking spray
- 1/4 tsp. salt
- 1 Tbsp. blackened seasoning
- Mango Salsa:
- 1 large mango, peeled and coarsely chopped*
- 1/4 cup finely chopped purple onion
- 2 Tbsp. chopped fresh cilantro
- 1 Tbsp. chopped fresh mint
- 3 Tbsp. orange juice
- 1 jalapeno pepper, seeded and minced
- 1/4 tsp. ground cumin
- 1/4 tsp. salt
Directions
- spray salmon fillets evenly with cooking spray for 5 seconds. Sprinkle salmon evenly with salt and blackened seasoning.
- Spray a large skillet with cooking spray for 2 seconds, and heat skillet over medium-high heat. Place salmon in skillet. Cook 4 to 6 minutes on each side or to desired degree of doneness. Serve immediately with Mango Salsa.

Mango Salsa:
- Stir together all ingredients. Chill, if desired.
