Chorizo, Black Bean, and Corn Quesadillas

Ingredients
- 4 (4-inch) chorizo sausage links, chopped
- 1 (15 oz.) can black beans, drained and rinsed
- 1/2 cup frozen whole kernel corn, thawed
- 1/2 tsp. ground cumin
- 2 Tbsp. Cilantro Pesto
- 4 (8-inch) flour tortillas
- 1 (8oz.) pkg. shredded Mexican chees blend
Directions
- Cook sausage in a large skillet over medium heat 5 minutes or until browned. Add black beans, corn and cumin and cook, stirring occasionally, 3 to 4 minutes or until thoroughly heated.
- Spread Cilantro Pesto evenly on each tortilla. Spoon chorizo mixture on half of each tortilla, sprinkle with cheese. Wipe skillet clean.
- Cook tortilla side down , in lightly greased skillet over medium-high heat 1 minute or until lightly browned. Fold tortillas over filling.
