Banana Nut Ice Cream

Ingredients

  • 4 ripe bananas, unpeeled
  • 3 cups whipping cream
  • 2 cups milk
  • 2 cups sugar
  • 8 egg yolks, lightly beaten
  • 1 1/2 cups chopped pecans, toasted

Directions

  1. Place bananas on a baking sheet.

  2. Bake at 350 degrees for 30 minutes; cool and peel. Process bananas in a food processor until smooth.

  3. Cook whipping cream and next 3 ingredients in a heavy saucepan over medium heat, whisking constantly, about 25 minutes or until mixture thickens and coats a spoon. (Do not boil). Fold on bananas and pecans, cool slightly. Place plastic wrap directly on surface of mixture, chill until completely cooled.

  4. Pour into freezer container of a 1-gallon hand-turned or electric freezer. Freeze according to manufacturer’s instructions.

  5. pack freezer with additional ice and rock salt, and let stand 1 hour before serving.

  6. makes 2 quarts
