Butter Pecan Ice Cream

Ingredients

  • 1 cup sugar
  • 6 Tbsp. flour
  • 1/2 tsp. salt
  • 3 cups milk
  • 4 eggs
  • 2 cups brown sugar
  • 1/4 cup margarine
  • 1 cup pecans, finely chopped
  • 2 pts. half & half
  • 2 tsp. vanilla

Directions

  1. Mix sugar, flour and salt. Add milk and eggs; whip with wire whisk. Cook over medium heat until like a thin pudding; let cool. Chill in refrigerator for 2 to 3 hours.

  2. Meanwhile, thoroughly work brown sugar into melted margarine. Also, toast pecans lightly in a little margarine. Add brown sugar, nuts, half & half and vanilla to first mixture and freeze in ice cream freezer.
