Ingredients
- 4 cups cubed cantaloupe (1 medium melon)
- 1 (6 0z.) can frozen lemonade concentrate
- 1 to 2 Tbsp. powdered sugar (optional)
- Sweetened coconut flakes, fresh mint leaves (optional)

Combine cantaloupe and lemonade concentrate in food processor bowl. Process until smooth. Sweeten to taste with powdered sugar, if desired.

Pour cantaloupe mixture into an 11 × 7-inch glass baking dish. Freeze 30 minutes. Remove from freezer; stir mixture. Return to freezer 30 minutes more. Remove and scrape mixture with fork to form shaved ice. Return to freezer. Repeat freeze/ scrape process until ice is slushy but not completely frozen, about 3 to 4 hours.

Spoon shaved ice into bowls or chilled dishes. Top with coconut and mint, if desired, and serve immediately.
