Chocolate Chocolate Cookie Ice Cream

Ingredients
- 3 oz. unsweetened chocolate
- 1 3/4 cups whipping cream
- 1 cup milk
- 1 cup sugar
- 3 egg yolks
- 1/2 tsp. vanilla extract
- 3/4 cup coarsely crumbles chocolate sandwich cookies
Directions
- In the top of a double boiler over hot water, melt the chocolate, stirring occasionally until smooth. In a medium , heavy saucepan over medium heat, stir together the cream, milk, and sugar until the sugar has dissolved and the liquid is scalded.
- In a mixing bowl, beat the egg yolks until light in color. Gradually whisk in about 1 cup of the hot cream mixture; then slowly whisk the egg mixture back into the saucepan. Cook over medium-to-low heat, stirring continuously, until the mixture is thick enough to coat the back of a metal spoon. Stir in the melted chocolate and vanilla.
- Set the bottom of the pan inside a bowl of ice and water and stir until the mixture has cooled to room temperature. Pour it into a bowl, cover with plastic rap and chill in the refrigerator for at least 1 hour.
- Pour the mixture into an ice cream maker and churn following manufacturer’s directions, about 30 minutes.
- When the ice cream is ready, churn or fold in the crumbled cookies.
