Chocolate Chocolate Cookie Ice Cream

Ingredients

  • 3 oz. unsweetened chocolate
  • 1 3/4 cups whipping cream
  • 1 cup milk
  • 1 cup sugar
  • 3 egg yolks
  • 1/2 tsp. vanilla extract
  • 3/4 cup coarsely crumbles chocolate sandwich cookies

Directions

  1. In the top of a double boiler over hot water, melt the chocolate, stirring occasionally until smooth. In a medium , heavy saucepan over medium heat, stir together the cream, milk, and sugar until the sugar has dissolved and the liquid is scalded.
  2. In a mixing bowl, beat the egg yolks until light in color. Gradually whisk in about 1 cup of the hot cream mixture; then slowly whisk the egg mixture back into the saucepan. Cook over medium-to-low heat, stirring continuously, until the mixture is thick enough to coat the back of a metal spoon. Stir in the melted chocolate and vanilla.
  3. Set the bottom of the pan inside a bowl of ice and water and stir until the mixture has cooled to room temperature. Pour it into a bowl, cover with plastic rap and chill in the refrigerator for at least 1 hour.
  4. Pour the mixture into an ice cream maker and churn following manufacturer’s directions, about 30 minutes.
  5. When the ice cream is ready, churn or fold in the crumbled cookies.
