Chocolate-Mint Ice Cream Pie

Ingredients

  • 20 chocolate cream-filled cookies, crushed
  • 1/4 cup butter, softened
  • 1 quart vanilla ice cream, softened
  • 1/4 cup plus 2 Tbsp. green crème de menthe
  • 2 Tbsp. crème de cacao
  • 1 cup whipping cream
  • 2 Tbsp. powdered sugar
  • chocolate shavings
  • chocolate curls

Directions

  1. Combine chocolate cookie crumbs and butter; mix well, and press into a buttered 9-inch pie plate.
  2. Combine ice cream, crème de menthe and crème de cacao; mix until smooth. Spread ice cream mixture evenly over crust; cover and freeze.
  3. Beat whipping cream until foamy; gradually add powdered sugar, beating until soft peaks form. Spread on pie. Garnish with chocolate shavings and curls, if desired; freeze until firm.
  4. Let frozen pie stand at room temperature 5 minutes before slicing.
