Coconut, Honey and Cinnamon Ice Pops

Ingredients

  • 1 (13 to 15 oz.) can light or regular coconut milk
  • 1/4 cup honey
  • 1/8 tsp. cinnamon
  • Dash ground red pepper (cayenne)
  • 1/4 tsp. vanilla paste or extract

Directions

  1. Whisk together the coconut milk, honey, cinnamon, cayenne and vanilla.
  2. Pour the mixture into molds. Freeze 45 minutes, insert sticks and freeze until solid, about 4 hours more.
  3. makes about 6 (3oz.) pops
