Homemade Marinated Sun-dried Tomatoes

Goes with Pasta Salad with Sun-Dried Tomatoes

Ingredients

  • 3 ounces sun-dried tomatoes
  • 3/4 c rice wine vinegar or white wine vinegar
  • 2/3 c olive oil
  • 7 garlic cloves, sliced
  • 2 T grated Parmesan
  • 1T dry white wine
  • 6 whole black peppercorns
  • 6 capers, rinsed
  • 1 t dried basil, crumbled
  • 1/2 t dried oregano, crumbled
  • 1/4 t dried tarragon, crumbled
  • 1/4 t dried thyme, crumbled
  • 1/4 t dried marjoram, crumbled
  • 1/4 t dried parsley, crumbled

Directions

  1. Place tomatoes in shallow dish. Pour vinegar over. Let stand 1 hour, stirring tomatoes occasionally.

  2. Drain tomatoes, discarding vinegar. Combine remaining ingredients in medium bowl. Add tomatoes. Cover and let stand 24 hours.
