Chicken and Sun-Dried Tomatoes

Serves 4 people

Ingredients

  • 4 chicken breasts
  • 21/2 T olive oil
  • 1 small onion
  • 1 c sun-dried tomatoes
  • 1-2 c fresh Parmesan
  • 1-2 c half and half
  • 2 T Vermouth or white wine
  • 1-2T dried tarragon
  • 1 clove garlic

Directions

  1. Soften tomatoes in boiling water and cut into strips. Saute chicken in oil and remove to a platter. Saute onion and garlic, add remaining ingredients, except the cheese. Return chicken to the pan, add the cheese. Simmer until heated and serve over pasta.
