Stir Fried Chicken

Ingredients

  • 1 lb. chicken, boneless thighs or breasts
  • 1/2 lb mushrooms
  • 1 T cornstarch
  • 2 T water
  • 2 T sherry
  • 1 t salt
  • 2 T oil
  • 1 small onion, chopped
  • 31/2 thin slices fresh ginger
  • 1 can bamboo shoots
  • 2 T soy sauce
  • 1 can water chestnuts

Directions

  1. cut chicken into thin slices. Marinate chicken with cornstarch, water, sherry, salt, chopped onion and ginger for at least one hour. Vertically slice mushrooms and place them in skillet that has 1T oil heated in it. Add soy sauce and stir fry for 2 minutes, remove. Heat remaining oil and cook chicken over high heat, stirring constantly, 2 min, adding water chestnuts after 1/2 minute and bamboo shoots after 1 minute. Add mushrooms and cook for 11/2 minutes. Serve over rice.
