Chicken Breasts stuffed with Broccoli

Ingredients

  • 4 boneless chicken breasts
  • 4T butter
  • 4 T chopped onions3/4 c fresh broccoli florets
  • 6 T chopped fresh mushrooms
  • 1/4 c saltine cracker crumbs
  • 2 T grated Parmesan
  • Salt and Pepper

Directions

  1. Pound chicken flat. Saute onions, add broccoli and continue to saute, add mushrooms and saute until soft. Remove from neat and add crack crumbs, grate cheese, salt and pepper. Mix and set aside.

  2. Place 1/3 stuffing mixture in center of each chicken breast. To enclose, fold left and right side of breast toward stuffing, overlapping completely. Finish closing the stuffing into the chicken by folding the bottom and top part of the breast towards the center again, overlapping the edges.

  3. Place chicken folded side down in baking dish. Bake at 350F after dotting with butter for 45-50 minutes. Baste with the butter 2-3 times
