Honey-Rum Peach Galette

Ingredients

  • 1 refrigerated pie crust
  • 2 to 4 Tbsp. sugar
  • 1/2 tsp. nutmeg
  • 2 cups sliced peaches
  • 1 1/2 Tbsp. honey
  • 1/2 tsp. rum extract

Directions

  1. Heat oven to 425 degrees.
  2. Place room-temperature pie crust on a lightly floured surface, roll into a 12-inch circle
  3. and place into a pizza pan. Combine sugar and nutmeg. Sprinkle 1 Tbsp. sugar mixture over dough. Arrange peaches spoke-like on top of dough 1 inch from edge, working from outside edge to center. Sprinkle peaches with remaining sugar mixture. Fold dough over peaches and crimp edges to fit; coat dough with cooking spray. Bake 430 minutes. Combine honey and rum extract and microwave on high 20 to 40 seconds. Brush mixture over warm tart and serve with ice cream.
