Murlene’s Black-Eyed Pea Salad I

Ingredients
- 1 can black-eyed peas
- 1 rib celery, chopped
- 1 Tbsp. finely chopped onion
- 1 Tbsp. oil
- 1 Tbsp. cider vinegar
- 1 Tbsp. mayonnaise
- 1/4 tsp. salt
- Dash cayenne pepper
- 1 ripe tomato, diced
Directions
- Drain peas; rinse and drain again. In a bowl, combine the peas, celery and onion.
- In a separate bowl, whisk together the oil, vinegar, mayonnaise, salt and cayenne. Add to pea mixture, mix well and chill several hours. When ready to serve, add the tomato. Mix carefully. Serve as a relish or with lettuce as a salad.
