Ann’s Black-Eyed Pea Salad

Ingredients

  • 1 yellow bell pepper, diced
  • 1 red bell pepper, diced
  • 1 cup diced red onion
  • 2 jalapeno peppers, seeded and chopped
  • 4 (15 oz.) cans black-eyed peas, drained, rinsed
  • 1 clove fresh garlic, minced
  • 1/2 cup wine vinegar
  • 2 Tbsp. balsamic vinegar
  • 1/4 cup olive oil
  • 1/2 tsp. cumin
  • 1 Tbsp. dried parsley
  • 1 tsp. salt
  • 1 tsp. black pepper
  • 4 slices bacon, cooked crispy

Directions

  1. In a very large bowl, combine all ingredients except bacon and mix well. Refrigerate 4 hours to overnight. Add bacon just before serving.
