Ann’s Black-Eyed Pea Salad

Ingredients
- 1 yellow bell pepper, diced
- 1 red bell pepper, diced
- 1 cup diced red onion
- 2 jalapeno peppers, seeded and chopped
- 4 (15 oz.) cans black-eyed peas, drained, rinsed
- 1 clove fresh garlic, minced
- 1/2 cup wine vinegar
- 2 Tbsp. balsamic vinegar
- 1/4 cup olive oil
- 1/2 tsp. cumin
- 1 Tbsp. dried parsley
- 1 tsp. salt
- 1 tsp. black pepper
- 4 slices bacon, cooked crispy
Directions
- In a very large bowl, combine all ingredients except bacon and mix well. Refrigerate 4 hours to overnight. Add bacon just before serving.
