Cranberry Sherbet

Ingredients

  • 1 12 oz. can evaporated milk
  • 1 12 oz. can frozen cranberry juice cocktail concentrate, thawed
  • 1 tsp. finely shredded orange peel
  • Cranberries (optional)
  • variegated mint leaves 9optional)

Directions

  1. Stir together milk, cranberry juice cocktail concentrate, and orange peel. Pour into a 2-quart square baking dish. Cover and freeze for 2 to 4 hours or until mixture is almost firm. Break into small chunks.
  2. Transfer chunks to a chilled mixing bowl. Beat with an electric mixer on medium speed until smooth but not melted. Return to pan. Cover and freeze until firm. Scoop into dessert dishes and garnish with cranberries and mint leaves, if desired.
