Economy Ice Cream and Variations

This recipe is so old, it has references to “freezing compartment” that I did not use.

Ingredients

  • 2 eggs
  • 6 Tbsp. sugar
  • 4 Tbsp. white corn syrup
  • 1 cup milk
  • 1 cup coffee cream
  • 1 tsp. vanilla

Directions

  1. Beat egg yolks, sugar and corn syrup until thick and lemon colored. Add milk, cream, flavoring. Pour into dessert tray. Freeze until firm. Remove to chilled bowl, add the unbeaten egg whites and heat until fluffy. Return to freezer for 20 to 25 minutes or until frozen.
  2. Variations:

  3. Chocolate: Cook two ounces shaved chocolate with sugar and milk of above recipe, stirring constantly until chocolate is melted. Chill, add 1 tsp. vanilla, then proceed as above.

  4. Maple-nut: Add 6 drops maple flavoring and 1/2 cup chopped walnuts to the basic recipe.

  5. Peanut Brittle: Substitute 1 cup crushed peanut brittle for sugar; add 1 tsp. vanilla. Proceed as instructed for basic recipe.

  6. Peach: Crush peaches through a sieve and substitute q cup of the pulp for 1 cup milk. Add 1/4 cup sugar and 1/2 tsp. almond extract. Proceed a instructed for basic recipe.

  7. Strawberry: Substitute 1 cup finely sieved strawberries for 1 cup milk. Add 1/4 cup sugar. Combine as shown for basic recipe.

  8. Peppermint: Substitute 1/3 lb. crushed peppermint sticks, for the sugar in basic recipe.

  9. Coffee: Dissolve 2 tsp. instant coffee in 1 tsp. boiling water. Add to basic recipe before freezing.
