Fresh Berry Serbet

This is another one of those recipes that is so old, they didn’t have freezers with refrigerators, and only had the ice cube tray freezer unit.

Ingredients

  • 1 1/2 cups fresh strawberries or raspberries
  • 1/2 cup powdered sugar
  • 2/3 cup (1/2 can) Eagle Brand Sweetened Condensed Milk
  • 2 Tbsp. lemon juice
  • 2 egg whites

Directions

  1. Crush berries; stir in sugar. Let stand until sugar is dissolved. Force through a sieve.
  2. Combine sweetened condensed milk, lemon juice and berries. Chill.
  3. Bet egg whites until stiff but not dry. Fold into chilled mixture. Pour into freezer container. Cover with wax paper.
  4. Freeze to a firm mush (about 1 hour).
  5. Turn into chilled bowl. Break up with fork then beat with rotary beater until fluffy but not melted.
  6. Quickly return to tray, cover with waxed paper. Return to freezer until firm.
  7. makes 1 1/2 pints
