Fresh Berry Serbet

This is another one of those recipes that is so old, they didn’t have freezers with refrigerators, and only had the ice cube tray freezer unit.

Ingredients
- 1 1/2 cups fresh strawberries or raspberries
- 1/2 cup powdered sugar
- 2/3 cup (1/2 can) Eagle Brand Sweetened Condensed Milk
- 2 Tbsp. lemon juice
- 2 egg whites
Directions
- Crush berries; stir in sugar. Let stand until sugar is dissolved. Force through a sieve.
- Combine sweetened condensed milk, lemon juice and berries. Chill.
- Bet egg whites until stiff but not dry. Fold into chilled mixture. Pour into freezer container. Cover with wax paper.
- Freeze to a firm mush (about 1 hour).
- Turn into chilled bowl. Break up with fork then beat with rotary beater until fluffy but not melted.
- Quickly return to tray, cover with waxed paper. Return to freezer until firm.
