Fresh Mango Ice

Ingredients

  • 1/2 cup sugar
  • 1/2 cup water
  • 2 large ripe mangoes (or 2 15-oz. cans o sliced mango, drained.)
  • 2 Tbsp. lime juice

Directions

  1. In a small heavy saucepan, stir together the sugar and water. Bring to a boil over medium heat, stirring until the sugar dissolves. Reduce the heat and simmer for 5 minutes. Remove from the heat and let the syrup cool.
  2. Peel, pit and slice the mangoes. Puree them in a processor. Force the puree through a food mill or a fine sieve to remove the fibers. Measure out 1 3/4 cups of puree.
  3. In a mixing bowl, stir together the measured puree, syrup and lime juice. Pour the mixture into an ice cream maker and churn following manufacturer’s directions, about 20 minutes.
