Fresh Peach Ice Cream

Ingredients

  • 6 eggs
  • 2 Tbsp. ll-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 1/2 quarts milk
  • 1 1/2 cups heavy cream OR 1 (12 oz.) can evaporated milk, chilled
  • 1 pint or more mashed and sweetened peaches

Directions

  1. In a mixing bowl, beat eggs and add flour and sugar, and mix well. Transfer to a medium saucepan, add milk and cook over low heat until thickened and mixture coats the spoon.
  2. Transfer to a bowl and cover with plastic wrap, pressing plastic to the surface to keep a skin from forming. Refrigerate until well chilled. When cold, add cream and peaches. Freeze in an ice cream maker according to manufacturer’s instructions.
  3. makes 1 gallon.

  4. Note for Vanilla ice cream, omit peaches and add 1 1/2 Tbsp. vanilla extract.
