Fresh Strawberry Ice Cream

this is another old recipe that I adapted to modern methods. It’s just right for those who don’t have an ice cream maker, and just want a small amount of homemade ice cream.

Ingredients

  • 2/3 cup (1/2 can) Eagle Brand Sweetened Condensed milk
  • 1/3 cup water
  • 1 cup crushed strawberries
  • 1/4 cup sugar, about
  • 1 cup heavy cream

Directions

  1. Make room in the freezer for a loaf pan or baking dish, and chill the dish until ready to use.
  2. Combine Eagle Brand milk and water. Chill.
  3. Sweeten strawberries. to taste. Stir into milk mixture.
  4. Whip cream to custard-like consistency. Fold into chilled mixture. Pour into chilled dish. Cover with waxed paper, pressing down to surface of mixture to prevent a skin from forming.
  5. Freeze to a firm mush ( about 1 hour).
  6. Turn into chilled bowl. Break up with fork then beat with rotary beater until fluffy but not melted.
  7. Quickly return to dish, cover with waxed paper. Return to freezer until firm.
  8. This is a good basic recipe that can be varied with different fruit, chocolate, or other combinations. Let your imagination rule the day.
