Ingredients
- vegetable oil
- 2 cups fresh corn
- 2 egg yolks (save whites)
- 2 Tbsp. minced onion
- 1/4 cup all-purpose flour
- 2 Tbsp. minced parsley
- 1/2 tsp. salt
- 1/2 tsp. baking powder
- dash pepper
- 2 egg whites
Directions
- Pour oil 2-3 inches deep in fryer or heavy 3-quart saucepan; heat to 375 degrees. In a medium bowl, combine corn, egg yolks and onion. Mix dry ingredients in small bowl; add to corn mixture. Beat egg whites until stiff but not dry; fold into corn mixture. Drop with teaspoon, a few at a time, into hot oil. Fry 2-3 minutes or until golden brown, turning once. Drain on paper towels. Sprinkle with salt, if desired; serve immediately.
