Pumpkin Cream Cheese Muffins

Ingredients
- 8 oz. cream cheese (room temperature)
- 3 eggs
- 2 1/2 cups sugar
- 3 Tbsp. butter, melted
- 2 1/2 cups flour
- 2 1/2 tsp. cinnamon
- 1/4 cup chopped pecans
- 1/2 tsp. salt
- 2 tsp. baking powder
- 1/4 tsp. baking soda
- 1 1/4 cup pumpkin
- 1 1/4 cup oil
- 1/2 tsp. vanilla
Directions
- Cream cheese filling: Mix cream cheese, 1 egg and 3 Tbsp. sugar, 1/2 cup flour, 1/2 tsp. cinnamon and pecans; set aside.
- Batter: In a large bowl, mix the remaining sugar, flour, salt, baking powder, soda and cinnamon. Add eggs, pumpkin, oil and vanilla, then beat. In a 12-cup muffin tin coated with nonstick spray, fill each muffin tin only half full with batter. Place 2 Tbsp. of the cream cheese mixture in center of each muffin, fill with remaining batter. Sprinkle pecan topping over the top. Bake at 375 degrees for 25 minutes.
