Frosty Fruit Medley

Ingredients

  • 3/4 cup graham cracker or cookie crumbs
  • 1 cup (1/2 pint) whipping cream
  • 1 can frosting- vanilla, or cream cheese
  • 1/2 cup coconut
  • 1/2 cup whole fresh or frozen unsweetened strawberries or blueberries (do not thaw)
  • 1/2 cup seedless grapes
  • 1/2 cup sliced fresh or canned drained peaches
  • 10 maraschino cherries, halved
  • 2 medium bananas, sliced crosswise
  • 11 oz. can mandarin oranges, drained
  • 8 1/4 oz. can crushed pineapple, drained

Directions

  1. Sprinkle 1/2 cup crumbs in bottom of 8 or 9-inch square pan. In large bowl, whip cream until peaks form. Fold in frosting and all fruit. Spoon over crumbs in pan. Sprinkle with remaining crumbs. Freeze 4 hours.
  2. Tip: If mixture freezes firm, allow to thaw at room temperature 1 1/2 to 2 hours before serving.
