Frozen Cranberry Whip

Ingredients

  • 2 cups (1/2 lb.) cranberries
  • 1 cup water
  • 24 marshmallows, quartered
  • 1/2 cup orange juice
  • 1/2 cup pineapple juice
  • 2/3 cup sugar
  • 2 Tbsp. lemon juice
  • 1 cup chilled whipping cream

Directions

  1. Chill bowl and beater well. Wash, sort and cook cranberries in a saucepan until skins pop. Meanwhile, in top of a double boiler over simmering water, heat marshmallows, orange juice and pineapple juice. Force cooked cranberries through a sieve to make a smooth pulp. Immediately add sugar and lemon juice and stir until sugar is dissolved. Remove marshmallow mixture from heat and blend into cranberry pulp. Pour into a freezer container. Place in freezer until mixture is mush-like in consistency. Using chilled bowl and beaters, beat whipping cream until soft peaks are formed. Gently fold whipped cream and chilled cranberry mixture together until blended. Turn into fancy 1 quart mold which has been rinsed in cold water and drained. Place in freezer about 4 hours until firm.
