Frozen Lemon Fluff

Ingredients

  • 1 pkg. vanilla pudding powder
  • 2 cups milk
  • 3/4 tsp. grated lemon rind
  • 3/4m cup finely crushed vanilla wafers
  • 2 Tbsp. melted butter
  • 1/4 cup lemon juice
  • 1 egg white, well beaten

Directions

  1. Place pudding powder in saucepan. Add milk gradually, stirring constantly. Cook and stir over medium heat until mixture comes to a boil and is thickened. Add lemon juice and rind. Cool. Fold in egg white. Turn into freezer-safe container, place in freezer. When partially frozen, pour into a bowl, and beat with electric mixer until fluffy and smooth.
  2. Mix together vanilla wafer crumbs and butter. Press mixture on bottom and sides of freezer container, reserving 3 Tbsp. for topping. Turn lemon mixture into container and sprinkle remaining crumbs over top. Freeze until firm.
