Frozen Maple Dessert

Serves 6 people

Ingredients

  • 3/4 cup maple-blended syrup
  • 4 eggs, separated, at room temperature
  • 1 cup evaporated skimmed milk, well chilled

Directions

  1. In a heavy 1-qaurt saucepan over medium heat, cook syrup and egg yolks until just boiling, about 7 minutes, stirring constantly; remove from heat and cool.
  2. In a small bowl, with same beaters at high speed beat egg whites until stiff peaks form; set aside.
  3. In a large bowl, with same beaters at high speed, beat evaporated skimmed milk until stiff peaks form; continue beating and slowly pour syrup mixture into milk.
  4. With wire whisk or rubber spatula, carefully fold beaten whites into milk mixture until well combined. Pour mixture into 10-cup bowl or mold; freeze until firm, 3 to4 hours.
  5. To serve: Unmold or spoon dessert into dessert dished.
