Frozen Sunshine

Ingredients

  • 1/4 cup brown sugar
  • 1 Tbsp. melted butter
  • 1 cup moist flaked coconut
  • 6 canned peach halves, drained
  • 6 Tbsp. grenadine syrup
  • 1 quart vanilla ice cream

Directions

  1. Mix together the brown sugar and butter; toss mixture with coconut. Brown lightly in a moderate oven, 350 degrees, about 5 minutes. Cool.
  2. To make each serving, place a peach half hollow side up in sherbet of dessert dish; ; sprinkle with coconut topping.fill hollow with a Tbsp. of grenadine syrup. Top with a large scoop of ice cream; sprinkle with coconut topping.
