Big Batch Tomato Sauce

Good basic pasta sauce

Goes with Spinach Meatballs with Tomato Sauce and
Sunday Baked Ziti and Meatball Casserole

Ingredients

  • 3 T olive oil
  • 3 medium carrots, chopped
  • 1 lg onion chopped
  • 2 cloves garlic, minced
  • 3 28-ounce cans tomatoes in puree
  • 1 bay leaf
  • 3/4 t salt
  • 1/4 t pepper

Directions

  1. saute carrots and onion in oil until tender, about 20 minutes. Add garlic, cook about 2 minutes while stirring. Break up tomatoes and add them to the pot with their juices. Bring to a boil, reduce heat and simmer at least 20 minutes longer. Makes 10 cups.
