Grilled Pineapple with Vanilla-Cinnamon Ice Cream

Ingredients

  • 1 pineapple
  • 3 Tbsp. brown sugar
  • 1/2 tsp. ground cinnamon
  • 1 Tbsp. grated fresh ginger
  • Vanilla-Cinnamon Ice Cream
  • Vanilla-Cinnamon Ice Cream
  • 1 quart vanilla cream, softened
  • 1/4 cup milk
  • 2 Tbsp. brown sugar
  • 1/4 tsp. ground cinnamon

Directions

  1. Skin pineapple; remove and discard pineapple core. Cut pineapple lengthwise into halves.
  2. Combine brown sugar, cinnamon, and ginger; rub evenly over pineapple.
  3. Coat a food rack with cooking spray; place on grill over medium-high heat (350 to 400 degrees). Place pineapple on rack.
  4. Grill, covered with grill lid, 5 to 7 minutes on each side. Remove pineapple from grill; cut into 1/4-inch thick slices. Serve with Vanilla-Cinnamon Ice Cream.
  5. Vanilla-Cinnamon Ice Cream

  6. Stir together all ingredients. Freeze 1 hour.
