Helado de Mango

Ingredients

  • 1 cup water
  • 3/4 cup sugar
  • Dash salt
  • 2 mangoes, peeled and sliced
  • 1/2 cup light cream
  • 1/4 cup lemon juice
  • 2 egg whites

Directions

  1. In saucepan combine water, 1/2 cup sugar, and salt. Cook 5 minutes; cool. In blender combine mangoes and cream, blending until smooth. Stir in cooled syrup and lemon juice.
  2. Place in freezer until partially frozen. Beat egg whites to soft peaks; gradually add 1/4 cup sugar, beating to stiff peaks. Place partially frozen mixture into chilled mixing bowl; break into chinks.
  3. Beat until mixture is smooth. Fold in beaten egg whites. Freeze until firm.
